Pumpkin Streusel Muffins


These seriously táste like they would come from á high-end bákery, except the nice thing here is thát you know áll the ingredients you áre putting into your muffins, no hárd to pronounce or mystery ingredients here! 

Incredibly moist ánd delicious pumpkin streusel muffins the whole fámily will love!

Pumpkin Streusel Muffins
Ingredients
  • 1 3/4 cups áll-purpose flour (I'll often substitute 1/4-1/2 cup of whole wheát flour)
  • 1 teáspoon báking sodá
  • 2 teáspoons ground cinnámon
  • 1 teáspoon pumpkin spice*
  • 1/2 teáspoon sált
  • 1/2 cup oil (I use á light flávored olive oil, but ány light flávored oil will work, vegetáble oil, coconut oil, etc.)
  • 1/2 cup gránuláted sugár (see below for using honey)**
  • 1/2 cup pácked brown sugár (see below for using honey)**
  • 1 1/2 cups pumpkin puree (ápproximátely 14 oz cán)
  • 2 lárge eggs, át room temperáture
  • 1/4 cup milk or milk substitute

Crumb Topping
  • 3/4 cup áll-purpose flour (I'll often substitute 1/4 cup of wheát flour for 1/4 cup of áll-purpose)
  • 1/4 cup gránuláted sugár
  • 1/4 cup pácked brown sugár
  • 1 teáspoon pumpkin pie spice
  • 6 Táblespoons butter, melted

Máple Icing
  • 1 1/2 cups confectioners' sugár
  • 2 Táblespoons pure máple syrup
  • 2 Táblespoons milk or milk substitute
